Product Description
Dry salame with pepper and garlic. This dry-cured Italian dry salame from San Francisco-based Molinari is made in the Milanese style. It is a finely minced mixture of 80% pork and 20% beef spiced with pepper and garlic.

San Francisco-based Molinari has been making Italian salami and sausages for decades. Its one of the most respected Italian-Style salami producers in the country.

Our mission at A.G. Ferrari Foods for more than 80 years has been to share our passion for food and wine in the tradition of our Italian-born founder, Annibale Giovanni Ferrari, and his family. Three generations later and over 80 years, we still hold strong to the same mission, La Qualit Non Ha Tempo or Quality Is Timeless.

Our products, which range from artisan olive oils and balsamic vinegars, to rustic pastas and sauces, are carefully selected to represent the quality and diversity of Italy's 20 regions. As the representative of the third generation of Ferraris to guide the family business, Paul Ferrari is committed to maintaining the same standards of excellence that have been our hallmark since 1919.

3 out of 5 stars Not quite up to Molinari standards   June 22, 2008

Ordered this online because we'd been missing it since moving to Ohio from California.

It arrived quickly and well packaged.

Unfortunately, the two salame's were both far too hard and somewhat greasy, indicating they were a bit old - unlike the fresh, slightly soft, direct from the producer product we're used to. Just not up to standards so we'll be buying our next supply directly from Molinari (or having some friends ship us a 'care' package).

Molinari is the epitome of Milano salame (frankly, Milan doesn't have any as good as Milano's made in the Bay Area product) so do yourself a favor and get it direct via Milano's internet sales.

3 out of 5 stars Good, but not at par with what you eat in Italy   January 17, 2004

I grew up in Italy up to the age of 23, since i came to live in the US I have been looking for "authenitic" italian salami. I know I can't have real italian salami becuase the way it is cured in Italy is forbidden in the US.

This salami is one of those that most resemble the real one, but it is still quite far. It's perfume is not strong enough. The flavor is good, but a bit on the mellows side (difficult to explain, there no need for extra pepper, it's "hot" which is missing, it is "flavor of salami"). The slice crumbles too easily in your mouth (even the thick 1/4" slices). It is a bit too white. Leaves very little after-taste, if we exclude the occasional "hot" when I coarser bit of pepper is chewed.

All in all, I think this is a good salami; still I think I should start lobby to lobby congress to change the law to allow importing Negronetto :)

5 out of 5 stars NO PSEUDO SALAMI THIS!   December 30, 2003

After visiting Italy we acquired a taste for real Italian salami, thus we were delighted to find this made by Molinari. It's chewy, tangy, and authentic!

The watered-down salami slices one finds vacuum packed in super markets should curl up in shame when compared with Molinari's.

Unlike some salamis with peppers it is not too hot but just warm enough to make you smile. Italian bread, some mozarella, this salami, and a glass of Chianti - heaven!
