Product Description
After a long wait, we finally bring you chorizo cured in Spain. You will immediately notice the difference between this chorizo and domestic imitations. Palacios, a company based in Logroo, the capital of the La Rioja region, earned permission from the U.S. authorities to export chorizo to the U.S. in 1997, but it wasn't until 2001 that it started entering the country in any significant quantity. Palacios Chorizo does not contain any preservatives or artificial colors; just pork sausage cured with paprika and garlic. They use a traditional process, using a secret 30-year-old family recipe. Its meat and natural ingredients are carefully selected, creating a smoky, earthy, sweet and tangy sausage.

Finally, Americans can enjoy one of the true culinary treasures of Spain! Chorizo is excellent in stews, potages, omelets, paellas, or served as part of a tapas. It makes a statement, with a flavor so powerful that it does not influence a dish subtly. Available in regular or hot. Varieties sold separately.

Outstanding chorizo.. My favorite use is to crumble/dice it into small pieces with potato dishes, or with sauteed mushrooms, peppers and onions to transform a Trader Joe's $4 cheese pizza into pure pizza heaven .. Spanish chorizo's smoky, earthy flavor will dominate anything you eat it with - so unless you're wanting to eat it as a tapa (excellent with a nice spicy syrah/shiraz), use it in smaller portions. My favorite use so far - a Spanish twist on a Mexican breakfast burrito.. Dice some up with some fried potatoes, onions, red pepper, and eggs with some grated Majorero cheese.. Unbelievable.

This product is truly exceptional ! A friend of mine showed it to me a couple of years ago and since then I had it permanently in my refrigerator. I eat it every morning in omlete; also I can eat it as a snack. It is fully natural and very dry, so it's not expensive considering that most of the meat products contain lots of water. The web retail price is prohibitive, in Wegman's is like 6$. Be careful that its highest quality makes it addictive.
